Frisée Endive, a member of the chicory family, is a visually striking leafy green with frilly, finely cut leaves that offer a slightly bitter yet refreshing flavor. The loose, bushy heads grow 8-12 inches in diameter, featuring curly darker green outer leaves and tender, pale-yellow inner leaves. The yellow color in Frisée is often obtained by blanching in the field by having heads tied up to exclude light, which reduces bitterness and gives the inner leaves their tender texture.
