Known as "Rocket" or "Eruca," arugula is best known for its fresh, tart, bitter, peppery flavor. Originally from the Mediterranean, the peppery leafy green has long been a staple in Italian and French cuisine. Arugula is popularly used as a salad green but can be used in lieu of most lettuces and herbs, such as in pestos, sauces, sandwiches, pizzas, and pastas for an added flair. Arugula is also nutrient-rich in vitamins K (90% of daily value), A and C and high in fiber and antioxidants.
