White Vienna Kohlrabi, also called German turnip, is a biennial vegetable, a low, stout cultivar of wild cabbage. Its taste and texture is somewhere between cabbage and broccoli stems. It can be eaten raw or cooked. When raw, kohlrabi is slightly crunchy and mildly spicy, like radishes mixed with turnip. Kohlrabi leaves are edible and can be used interchangeably with collard greens and kale.
