The Japanese Persimmon or Kaki Persimmon, tastes richly sweet with an almost honey-like flavor with slight cinnamon undertones, when ripened. This 30-feet-tall deciduous tree is native to China, Japan, and Korea. Its dark green, glossy leaves provide a stunning autumn display of yellow, orange, and red hues. Kaki Persimmons ripen in late autumn, with colors ranging from yellow-orange to deep red when ripe. Kaki Persimmons and leaves can be consumed fresh, dried, cooked, or made into vinegar. The Kaki Persimmon has been cultivated in China for over 2000 years and was introduced to Japan around the 7th century. In Japan, "Hoshigaki", a traditional dried persimmon, is made by hanging and massaging the fruits until they become tender and sweet. Kaki persimmons are also rich in vitamins A and C, providing a healthy and delicious snack.

Planting Instructions:

Soil Preparation:

Choose a clear, sunny location that is not in the shade of other trees. Trees establish roots better in sandy, well-drained soils rather than heavy, poorly drained soil. Remove weeds, large rocks, and litter from the planting area. Till the soil 8-10 inches deep and rake several times to break up large clods. It is best to do this when the soil is dry enough to not stick to garden tools. Loosening the soil will help the plant establish strong roots.

Planting:

Seeds require cold, moist stratification. To stratify, roll seeds in a damp paper towel and place in a resealable bag. Place bag in fridge and keep at 35F for 60-90 days. After, to germinate, place bags in 70F-90F area. After 10 days, sow in potting soil or outdoors in >65F soil. Keep moist. Or, directly sow seeds in late Fall. Sow seeds 1 inch deep in fertile soil and keep soil moist until established. Seedbeds can be covered with plastic film to promote germination. When tree seedlings reach at least 6-inches in height, transplant seedlings to the desired location.

Planting Depth: 1 inch
Spacing:
30 feet

Care During the Season:

Watering: Avoid dry soil, water about once a day and keep seedlings moist until established.

Weeding: Keep plants as weed-free as possible. When plowing or hoeing do not dig deeper than 1 inch to prevent from cutting the feeder rooters which may slow the plant's growth.

Fertilizing: Seedlings may be fertilized when they are at least 4 inches tall:.

Harvesting:

Pick persimmon fruits when vibrant in color, usually anywhere from yellow-orange to orange-red, and firm as a tomato, usually after flowering in late Fall. Majority of oriental persimmons will drop in flushes shortly shortly after flowering in August-October.
