The Hungarian Wax Pepper (chile hungaro, chile guero) is a large, thick-walled, bright yellow, medium-hot pepper originated in Hungary and is usually harvested while still yellow and very similar looking to the banana pepper at 5-8 inches long and 2 inches wide. Hungarian Wax Peppers will increase in spice level considerably as they mature into larger, red peppers. They are excellent for eating and pickling.
