The Ruby Queen Beet is a great home garden beet, performing well in poor soil and is a compact size growing short tops, just 10 inches in height. The round, smooth beetroots have a luxurious, lipstick red color that is retained when cooked. They are popular in the Northeast for their cold-hardiness and are excellent for canning. Roots are buttery-tender and are excellent raw in salads, pickled, boiled, roasted, or steamed.
