The Nantes carrot was developed in the 1850's, named after the largest city in Brittany, France. It was described as having a near perfect cylindrical root with smooth skin and entirely edible near-red flesh, both sweet and mild in flavor. The Scarlet Nantes is an even sweeter, crispier variety of the Nantes carrot. Scarlet Nantes carrot is delicious roasted or glazed, pureed for soups and desserts, or shredded for salads and slaws.
