Spaghetti Squash is a fun winter squash in bright shades of yellow or orange. The flesh is solid, similar to other squash when raw, but when cooked the meat of the separates from the rind in spaghetti-like strands and can be used in place of spaghetti in recipes. Spaghetti squash is also nutritious, offering high concentrations of fiber, beta-carotene, folate and B-vitamins.
