Jicama, called Mexican yam bean, or Mexican turnip, is a globe-shaped root vegetable with papery, golden-brown skin and a starchy white interior. It's white inside and tastes like an apple but not as sweet. Though it produces legume fruits they are typically removed to promote tuber growth. In Central America, jicama is often sold by street vendors and commonly eaten raw, and seasoned with lemon or lime juice and chili powder.
