New Zealand Spinach, also known as a "hot weather spinach" is an annual that grows excellently in hot, dry weather. It is slow-bolting and grows succulent, triangular- to oval-shaped leaves rich-green leaves that are flavorful and nutritious. Harvest young for raw eating or steam and saute the mature leaves. An excellent source of Niacin and Zinc, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin E, Vitamin K, folic acid, iron, and calcium.
