Dutch Corn Salad, known as Mache or Lamb's Lettuce, has lush, dark-green, rounded spatulate leaves that grow up to 6" long in an attractive rosette and is a member of the honeysuckle family. This leafy green is known as "Rapunzel" in German and inspired the fairytale name when these greens were stolen from the wicked witch's garden! Dutch Corn Salad has a mild, nutty, flavor and velvety texture that is a favorite of lambs. Named for its ability to grow wild in cornfields, this salad green is native to Europe and has the unique ability to grow in very cold environments; it is usually best harvested before it bolts into clusters of tiny white flowers in warmer weather. Corn Salad has nearly three times the value of vitamin C, beta-carotene, Vitamin B6, iron, and potassium as lettuce.

Planting Instructions:

 

Soil Preparation:

Remove weeds, large rocks, and litter from the planting area. Till the soil 8-10 inches deep and rake several times to break up large clods. It is best to do this when the soil is dry enough to not stick to garden tools. Loosening the soil will help the plant establish strong roots.
 

Planting:

Corn Salad is a cool-season crop and does well in the cool temperatures of Spring and Fall. Soil temperature should be at least 50F for seeds to sprout. Use a hoe handle or stick to make a 1/2 inch furrow deep down the center of the ridge.  Plant 1-2 seeds in the furrows spaced 8 inches apart within the rows. Cover lightly with loose soil then sprinkle with water.

Care During the Season:

Watering: Water plants moderately. If the soil moisture is low, water but avoid waterlogging soil. Try to avoid wetting foliage to prevent diseases.

Weeding: Keep plants free of weeds, which rob weak root systems of nutrients and moisture.

Insecticides: Insecticides may be used to protect plants. Bt-based insecticides and sulfur are organic options that can be used for prevention. Sevin is a synthetic option. Sulfur also has fungicidal properties and helps in controlling many diseases. Before using a pesticide, please read the label and always follow cautions, warnings and directions.

Diseases: Disease can happen in cloudy, damp weather. Check plants daily and treat with an approved fungicide if diseases do appear. Neem oil, sulfur, and other fungicides are available for use. Please always follow label directions.

Harvesting:

Corn salad can be harvested at any stage of maturity. Fully mature corn salad leaves may be harvested when dark green and full-length, about 6" long. Cut individual outside leaves or harvest the whole head by cutting the base at the soil level. Harvest regularly for continuous growth.
