Frisée Endive, a member of the chicory family, is a visually striking leafy green with frilly, finely cut leaves that offer a slightly bitter yet refreshing flavor. The loose, bushy heads grow 8-12 inches in diameter, featuring curly darker green outer leaves and tender, pale-yellow inner leaves. The yellow color in Frisée is often obtained by blanching in the field by having heads tied up to exclude light, which reduces bitterness and gives the inner leaves their tender texture. Perfect for adding texture and a hint of bitterness to salads, frisée can also be lightly sautéed or braised  Frisee is popular in French cuisine, and is a key ingredient in the classic salad "Salade Lyonnaise," which combines frisée with lardons, poached eggs, and a warm vinaigrette. Simply wash and trim the leaves, then toss them into fresh salads, pair them with bold dressings, or add them as a garnish for an elegant touch.

Planting Instructions:

 

Soil Preparation:

Remove weeds, large rocks, and litter from the planting area. Till the soil 8-10 inches deep and rake several times to break up large clods. It is best to do this when the soil is dry enough to not stick to garden tools. Loosening the soil will help the plant establish strong roots.
 

Planting:

In the Spring, plant after all danger of frost has passed. Plant seeds 1/4 inch deep in raised beds spaced 8 inches apart. Space the rows 18 inches apart or spaced about 2-3 feet apart if growing with other plants. Planting in moist soil is best for seeds to germinate and emerge quickly.

Care During the Season:

Watering: Water plants moderately. If the soil moisture is low, water but avoid waterlogging soil.

Weeding: Keep plants free of weeds, which rob weak root systems of nutrients and moisture.

Insecticides: Insecticides may be used to protect plants. Bt-based insecticides and sulfur are organic options that can be used for prevention. Sevin is a synthetic option. Sulfur also has fungicidal properties and helps in controlling many diseases. Before using a pesticide, please read the label and always follow cautions, warnings and directions.

Diseases: Disease can happen in cloudy, damp weather. Check plants daily and treat with an approved fungicide if diseases do appear. Neem oil, sulfur, and other fungicides are available for use. Please always follow label directions.

Harvesting:

Endive is usually harvested when the plant is 8-12 inches tall but the plant can be harvested at any stage of growth.  Harvest individual baby endive leaves when they reach the desired size. Full sized leaves can be harvested later but cutting the head at the base of the plant.
