One order has a mix of 3 species of seed potatoes:

1. Pontiac Red- thin red skin with sweet white flesh. This popular red all-purpose potato has a smooth and creamy finish. They are also perfect in salads as they hold their shape well.

2. Russet Burbank - dark brown-skinned, white-fleshed potatoes. Hearty and nutritious, their thick skin and flaky texture are excellent for baking, french-frying, and making fluffy mashed potatoes. America's most widely grown potato.

3. Adirondack Blue - blue-fleshed potatoes with a purple tint. These purple potatoes are an excellent way to add flair and nutrition to your typical potato side dish as they hold their color when cooked.

About Seed Potatoes: Seed potatoes produce potatoes that are an exact clone of the mother seed potato. Seed potatoes are not the same as true potato seeds, which are seeds harvested from the berries of potato plants. Seed potatoes produce genetically identical copies to ensure the desired qualities (disease-resistance, high-yields) of a potato species is passed down.

Planting Instructions:

Cut large potatoes into golf-ball sized segments with at least 2 eyes on each and let dry 1-2 days before planting in at least 50F dry soil. Leave egg-sized or smaller potatoes ("Size B") whole. Plant seed potato segments cut-side down, eyes up in 6 inch by 6 inch deep trenches, 12 inches apart. Cover with 3 inches of soil. When sprouts appear after 14-20 days, add 3 inches of soil.  Repeat until soil mound is 5 inches above ground. Maintain even moisture by watering 1-2 inches of water per week. Potatoes are ready to harvest when tops of plants have died completely.
