Buttercup squash is a variety of winter squash that is very similar to Kabocha squash, also known as "japanese pumpkin." Its peak season starts in early fall and lasts through the winter. It has an orange flesh that is slightly sweeter than butternut squash and has a creamy texture. Buttercup squash is delicious roasted, in soups, pies, stews, and curries. It is also rich in vitamins A and C, B vitamins, carotenoids, and minerals.
