Chioggia Beet (Candy Cane Striped)
Chioggia Beets are sweet flavored beets most notable for their striking deep pink and white spirals. This Italian heirloom variety originates from the town of Chioggia, near Venice. Chioggia Beets adds a beautiful pop of color to salads and is a fun side to any entree. It is excellent pickled, boiled, roasted, or steamed. The mild flavored 12 inch tops are green with red-striped stems that can be eaten raw or cooked and are an excellent substitute for spinach. Add beet greens and microgreens to salads as garnishes. Both the roots and greens are nutritious - rich in vitamins C, A, and fiber.

Soil Preparation and Fertilizing:
Planting:In southern states, beets can be grown all winter. Farther north, beets can be planted as soon as the soil can be worked in Spring. Soil temperature should be at least 40F for beet seeds to sprout. Use a hoe handle or stick to make a 1/2 inch furrow deep down the center of the ridge. Plant 1-2 seeds in the furrows spaced 1-2 inches apart within the rows. Cover lightly with loose soil then sprinkle with water. In hot weather, you may optionally cover seed with sands or light-colored mulch. You may make several plantings 3 weeks apart for a continuous supply of beets.
